Tea evolution - From Green tea to other teas

1. The production of Yellow tea
The basic technology of green tea is to fixation, rolling and dry, it is called green tea. When the green tea fixation process is not properly mastered, such as the low temperature of fixation,or the steaming time is too long, will make the leaves color turn yellow, produce yellow leaf and yellow soup, similar to the yellow tea that appeared later. Therefore, the production of yellow tea may have evolved from the improper mastery of green tea production.

2. The emergence of Dark tea
When the fixation of green tea processed, if the amount of tea leaves is too much, or the temperature is low, and the leaf color would become dark brown green which is similar to dark. This is the process of producing dark tea. The manufacture of dark tea began in the middle of the Ming Dynasty.
The Origin and Development of Puerh Tea
Puerh tea is native to Yunnan and was originally referred to as tea produced within the jurisdiction of Puer City. In the Song Dynasty, because of the need of war, the “tea horse market” was set up in Puer City, and Puerh tea was exchanged for Tibetan horses, and the first “tea-horse road” from Puer to Tibet was formed. In the Yuan Dynasty, Puerh tea entered Russia with the Mongolians.

3. The origin and evolution of White tea
The products made by the method of drying tea leaves in the ancient are actually the original white tea.
Modern white tea began to evolve from the green tea of the Song Dynasty. It originally refers to the surface of dry tea with white pekoe and silver color. Later, it has developed different colors such as white peony, Gongmei and Shoumei.

4. The production and development of Black tea
In the process of tea production and development, it was found that the sunning was used instead of fixation, and the color of the leaves after the rolling became brown and black tea was produced. The earliest black tea production began with small leaves black tea from Chong'an, Fujian. Since the creation of the small leaves black tea, it has gradually evolved to produce gongfu black tea. Therefore, Gongfu black tea was founded in Fujian. Later, the export of Chinese black tea was highly appreciated by foreign tea lovers. In the 1920s, India and other countries began to develop black fanning tea that was cutted and processed. After the production and sales increased year by year, it eventually became the main tea in the world tea trade market.

5. The origin of Oolong tea
Oolong tea is between green tea and black tea. It is made from green tea and then black tea. The origin of oolong tea is still controversial in academic circles. Some inferences appear in the Northern Song Dynasty. Some presumptions began in 1851–1861, but they all believed that they were first established in Fujian.

6. Scented teaThe origin of the scented tea can be traced back to the Song Dynasty. At that time, the spice was added to the green tea, the borneol, which was called the dragon and phoenix tea. In the 12th century, it was common to add herbs to tea. In the Ming Dynasty "Tea Spectrum", the description of the scented tea method said that jasmine, rose, etc. can be used as tea.
In the Ming Dynasty, the technique of processing scented tea was increasingly perfect, and there were many varieties of flowers that could be used for processing tea. According to the "tea spectrum", there are osmanthus, jasmine, rose, orchid, orange blossom, plum.  Modern scented tea, in addition to the above-mentioned flower species, also has white orchids, alfalfa, and pearl orchids.
From traditional tea products to new tea products development
After thousands of years of development, thousands of products of the six basic teas can be said to be rich and colorful. However, with the development of science and technology and the continuous improvement of people's lives, the development of new tea products are also booming. First of all, new bottled beverage teas are constantly being introduced, as well as a variety of fruity teas, herbs teas and flowers tea, medicinal health tea, as well as tea soda, tea champagne, tea ice cream, tea wine, etc., are varied and colorful.
With the advancement of science and technology, the use of advanced industrial means to extract and separate the useful chemical components in tea to prepare health foods or beverages to meet the needs of consumers with health care needs is the result of the development of high-tech application in the tea industry. The active ingredients of tea which have been extracted and utilized are: tea polyphenols, tea polysaccharides, theanine, tea pigment, caffeine, etc,. They are made into capsules, tablets, oral liquids, etc., and are used for disease prevention and treatment of the human body. It has begun to be valued by people and continues to achieve practical results with clinical significance.
